MY FAVOURITE PASTA DISH
This isn't really "wellness" related so much as it's literally just my favourite pasta dish right now, but it's Wednesday, so here's a Wellness-ish Wednesday blog post for you.
It didn't occur to me to make this a blog post until the day after we made the pasta and ate it all ... so for now, I don't have a picture of what it actually looks like but I'm sure I'll be wanting to make it again soon. Also, you can probably easily imagine what it looks like.
It's super quick and easy, and if you don't feel like cooking extra onions and garlic, you save even more time. The way we make it is meat-free, but you can easily add some nice chicken (though, gnocchi is really filling as is). In my mind, gnocchi is often served with alfredo/cream sauce, but my body doesn't know how to process rich sauces, so we use tomato sauce lol.
This whole recipe is based on my (and my boyfriend's) personal preferences. You can use any kind of onion, sauce, or pasta you want; this is just how we make it and what we like. It's really all up to you!
Anyways, let's just get to the recipe.
ingredients and what you'll need
(1) white or yellow onion (you won't use the full onion, maybe 1/4)
(2) cloves of garlic
(1) can of Primo Thick & Zesty Garlic and Herb spaghetti sauce
a few handfuls of spinach
~2 tbsp olive oil to cook the onions and garlic
large pot (stock or otherwise)
what you do
heat frying pan to low-medium heat
dice approx. 1/4 of the onion and 2 cloves of garlic
using the 2 tbsp. of olive oil, start cooking the onions
after the onions have cooked for a few minutes, add the garlic
after a few more minutes, add the spaghetti sauce to the pan
add a few handfuls of spinach to the sauce/onions/garlic and mix; it will wilt after a few minutes in the warm sauce
while that's going on...
boil enough water for the amount of pasta you'll be cooking (gnocchi only takes a few minutes to cook, so the longest part will be waiting for the water to boil)
cook and drain the gnocchi
add it to the pan with the sauce and mix well
plate and serve with fresh shredded parmesan on top
