BANANA OAT PANCAKE RECIPE
I've been making these pancakes for a few years now and I love them. They're super easy, pretty healthy (depending what you top them with), and make very little mess in the kitchen. I've searched and searched for the recipe I originally used and cannot find it anywhere. I have this recipe from The Wholesome Dish saved that I thought was what I first tried, but it's not even close. So I don't know if maybe they edited their recipe to become this one or what, but I can't find it anymore. (But by all means, try that recipe if you'd like!)
So, I figured I would quickly type up the recipe I use so I can refer back to it myself (even though it's like 4 things, my memory is so bad so... yeah), and for you to use as well.
Similar to "regular" pancakes, this is a pretty easy-going recipe, so you can do really whatever you want with it: you can add whatever you want, top it with whatever you want; easy-going!
Ingredients:
・ 1/4 cup quick-cooking oats
・ 1 egg
・ 1 tbsp peanut butter
・ 1 medium, ripe banana
・ ground flaxseed meal
Directions:
・ mix ingredients together
・ cook over low - medium heat
・ serve with fruit, peanut or almond butter, or butter and syrup
Notes:
・ This recipe makes about 3 small-medium sized pancakes, so it's perfect for one person but you can easily multiply the ingredients to make a bunch for more than one person!
・ I've never tried, but you can probably swap out the egg for some kind of plant-based egg substitute. The only egg substitute I've tried (that I loved) is Just Egg, however it's not yet available in Canada and it tastes (to me) like fried rice, so not sure how it might alter the taste.
・ You can use as much or as little of the peanut butter and flaxseed as you want / like.
・ You can also probably sub. the peanut butter for almond butter or another nut butter.

I don't have any pics, because they always look like sh*t when I make them so... sorry. Hopefully one day I'll perfect the actual cooking aspect of this recipe.
